There actually is quite a bit of piano music composed for people with only one hand. Some is written especially for left hand only, some for the right hand, some can be played equally well with either hand.

Beginning level piano music could work with a few missing fingers, and if you have to have missing fingers, it's better to have them missing from the left than from the right. A good teacher could easily edit the music to make it workable for you.

(don't you just hate teachers that cheerfully refuse to let you get away with excuses? :teeth: )

There are a handful (no pun intended) of sonatas intended for players with one hand. If that doesn't work for you. Take up drums:
